Curried Basmati Rice
- 1 cup sliced mushrooms
- 2 onions chopped
- ½ red bell pepper seeded and chopped
- ½ green bell pepper seeded and chopped
- 1 cup basmati rice
- 2 teaspoons curry powder
- ½ teaspoon salt

- Spray a large nonstick saucepan with nonstick cooking spray, heat.
- Combine the mushrooms, onions and bell peppers; sauté until softened, 3-4 minutes.
- Stir in the rice, curry powder, salt and 1 ½ cups water. Bring to a boil. Reduce the heat and simmered, covered, 15-20 minutes.
