1tablespooncornstarch mixed with ¼ cup orange juice
½cuporange juice
2cupschunked precooked lean beefsteak
2cubes beef bouillonor chicken
Salt
Freshly ground black pepper
½cupsalted peanuts
Toppings and sides: BananaCoconut flakes, Peanuts, Raisins, Mango chutney
Instructions
In a large skillet over medium heat, heat the peanut oil. Add the onion, bell pepper, and garlic. If using fresh beef or chicken, this is the time to put it in. Cook, stirring, until the onion is transparent, 3 – 4 minutes.
Stir in the curry powder and pepper flakes. Cook for approximately 1 minute.
Pour in the cornstarch-orange juice mixture and blend well. Add the ½ cup orange juice, and the bouillon cubes. Stir until thickened and hot.
Stir in the cooked beef or chicken and heat thoroughly. Season to taste with salt and black pepper. Serve the mixture over basmati rice with the toppings and chutney on the side
