Curried Beef

We love the combination of flavors in this dish, specially the curry. Buy precooked roast beef from your supermarket deli, or grilled chicken if you want to use chicken instead.

Ingredients

  • 2 tablespoons peanut oil
  • 1 medium yellow onion chopped
  • ½ red bell pepper cut into slivers
  • 2 cloves garlic chopped
  • 1 tablespoon curry powder or more to taste
  • ½ teaspoon crushed red pepper flakes
  • 1 tablespoon cornstarch mixed with ¼ cup orange juice
  • ½ cup orange juice
  • 2 cups chunked precooked lean beefsteak
  • 2 cubes beef bouillon or chicken
  • Salt
  • Freshly ground black pepper
  • ½ cup salted peanuts
  • Toppings and sides: Banana Coconut flakes, Peanuts, Raisins, Mango chutney

Instructions

  • In a large skillet over medium heat, heat the peanut oil. Add the onion, bell pepper, and garlic. If using fresh beef or chicken, this is the time to put it in. Cook, stirring, until the onion is transparent, 3 – 4 minutes.
  • Stir in the curry powder and pepper flakes. Cook for approximately 1 minute.
  • Pour in the cornstarch-orange juice mixture and blend well. Add the ½ cup orange juice, and the bouillon cubes. Stir until thickened and hot.
  • Stir in the cooked beef or chicken and heat thoroughly. Season to taste with salt and black pepper. Serve the mixture over basmati rice with the toppings and chutney on the side
