Creamed Potatoes

I made these potatoes quite often when we lived in St. Louis. For some reason, haven’t prepared them lately. I remember everybody liked them then.

Creamed Potatoes


  • ¾ kg potatoes
  • 1 tablespoon margarine or butter
  • 4 dl milk
  • Salt, white pepper
  • Finely chopped parsley


  1. Wash and peel the potatoes.
  2. Cut in slices or cubes.
  3. In a kettle, bring the milk and margarine or butter to a boil.
  4. Add the potatoes and cook, covered, till tender.
  5. Season to taste with salt and pepper.
  6. Sprinkle with chopped parsley.
  7. Serve with fried meat or fish.
